		<description>You cook it for...ages, and then some. The longer it simmers, the richer it tastes and the better your kitchen smells. But add the caramelized onions at the end, otherwise they turn to mush and overwhelm all the other herbs. Also, I save about half of the basil and toss it in at the very end. (The other herbs I use are italian parsley and oregano, both fresh, and a few generous pinches of red pepper flakes.)</description>
